Overnight Breakfast Casserole

Whether you are meal prepping or hosting a brunch, this super easy overnight casserole will make for a stress free morning!

Equipment

  • 1 13 x 9 baking dish
  • 1 large mixing bowl
  • 1 skillet (if using ground sausage)

Ingredients
  

  • 1 lb. ground sausage or diced ham
  • 1/2-1 cup peppers or other vegetable of choice
  • 6 slices bread of choice
  • 6 eggs
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • salt and pepper to taste

Instructions
 

  • Start by preparing whatever meat you selected. If you chose ground sausage, brown it, drain it, and set it aside to cool off. If you chose ham, simply dice or cube the ham into small chunks. 
  • Next, soften or cook whatever vegetable you plan to use in your casserole. I like to pan fry my sweet peppers in a little bit of olive oil. Set these aside to cool alongside the meat. 
  • Next, cut or tear the bread slices into small pieces.
  • Get a large mixing bowl and beat the eggs in the bowl. Once the eggs are beaten, stir in the milk, cheese, bread, veggies, and meat. 
  • Pour the entire mixture into a greased 13 x 9 baking dish. 
  • Cover the dish with tinfoil and place it in the refrigerator to sit overnight (or at least 8 hours). 
  • The next morning, about an hour before you want to eat, begin preheating your oven to 350. Once the oven reaches temperature, cook the casserole for 25 minutes covered and 25 minutes uncovered. Once they come out, cut them into squares and enjoy!
