Whether you are meal prepping or hosting brunch, this easy overnight breakfast casserole is the perfect solution for a stress free morning!
What You Will Need
- Ground Sausage or Ham– You can use whichever meat you prefer. I think both are delicious! However, the meat does need to be cooked before it goes in the mixture to sit overnight. So if you are looking for a super easy option, I would opt to use ham steaks or buy a package of already diced ham.
- Eggs- The size of the egg really isn’t all that important, but I usually use large eggs in mine.
- Bread- You an use any type of bread that you will like. Heavier breads, like wheat, will tend to make the casserole a little heavier. One of my favorite combinations was Tuscan garlic Italian bread with sausage!
- Cheddar Cheese- You can use another type of cheese if you would like, but cheddar tends to work best with this casserole and meats.
- Milk- You can use whatever variety of milk you prefer in this recipe.
- Veggies- I usually opt for 4-5 mini sweet peppers or a green bell pepper. However, I have also done broccoli with ham before and it was very good! The veggies are totally up to you! You can also add more or less depending on your liking.
- Salt and Pepper (to taste)
How to Make It
Start by preparing whatever meat you selected. If you chose ground sausage, brown it, drain it, and set it aside to cool off. If you chose ham, simply dice or cube the ham into small chunks.
Next, soften or cook whatever vegetable you plan to use in your casserole. I like to pan fry my sweet peppers in a little bit of olive oil. Set these aside to cool alongside the meat.
Next, cut or tear the bread slices into small pieces.
Get a large mixing bowl and beat the eggs in the bowl. Once the eggs are beaten, stir in the milk, cheese, bread, veggies, and meat.
Pour the entire mixture into a greased 13 x 9 baking dish.
Cover the dish with tinfoil and place it in the refrigerator to sit overnight (or at least 8 hours).
The next morning, about an hour before you want to eat, begin preheating your oven to 350. Once the oven reaches temperature, cook the casserole for 25 minutes covered and 25 minutes uncovered. Once they come out, cut them into squares and enjoy!
